In case anyone feels like trying out a new curry recipe, here's one I came up with based on a recipe I found online. There are a lot of ingredients and it takes about an hour to make, but it's really good. Try it out and let me know what you think.


Chicken peanut curry

Ingredients:
Rice
1 can of lentils
1 can of chickpeas
1 can seasoned tomatoes
1 ½ jars of peanut satay sauce
3 generous spoons of peanut butter
1/2 a yellow bell pepper
1/2 a red bell pepper
1/2 a green bell pepper
5 white mushrooms
2 green onions
1/3 of a yellow onion (chopped)
6 chicken thighs (cooked and sliced into thin, small strips)
Olive oil
Hot curry powder
Ground turmeric
Garlic powder
Salt
Pepper
Paprika


Steps:
1) Get the rice cooking in the rice cooker.
2) Cook and slice the chicken.
3) Strain the chickpeas and the lentils to remove the fluid before sautéing in a pan with olive oil over medium heat.
4) Add peanut satay sauce and peanut butter.
5) Add curry powder, turmeric, garlic powder, salt, pepper, and paprika to taste.
6) While the chickpeas and lentils are cooking in the sauce, rinse and slice 1/2 a yellow bell pepper and 1/2 a red bell pepper.
7) Rinse and slice 5 white mushrooms and 2 green onions.
8) Chop up approx. 1/3 of a yellow onion.
9) Add the chopped vegetables and (undrained) tomatoes to the chickpeas and lentils and let that cook together for approx. 5 minutes.
10) Add the chicken strips and stir it all together.
11) Simmer for 10 minutes and serve.


This makes enough curry for three people to have two suppers plus a bit for lunches (yes, it makes a lot).
